Azuki Beans with Wheat Berries

  • 1 cup azuki beans, soaked 6-8 hours

  • 3/4 cup wheat berries, soaked 6-8 hours

  • 1 piece kombu, 1-2 inches long

  • Water (soaking water can be used)

  • 1/4 to 1/8 tsp sea salt

  • chopped scallions for garnish


  1. Place kombu on the bottom of a pot. Place azuki beans and wheat berries on top of the kombu. Add water just to cover. Bring to a boil, cover, and reduce the flame to medium-low. Simmer 1 1/2 to 2 hours or until 70 percent done, adding water, occasionally as needed, just to cover. Add sea salt and simmer another 1/2 hour or so until soft. 

  2. Remove, place in a serving bowl, garnish and serve.
