Baked Squash and Onions
2 cups butternut or buttercup squash, sliced thin
1 cup onion, sliced in thin half-moons
1/4 to 1/2 cup water
pinch of sea salt
Preheat oven to 375°F.
Place the onion on the bottom of a casserole dish. Layer the squash on top. Add the pinch of salt and water. Cover and bake for 35 to 40 minutes until tender.
Remove the cover and brown for 5 more minutes.
Remove and serve.
