Boiled Whole Greens
1 bunch greens, washed in water
Place about 1 inch of water in a pot, cover, and bring to a boil. Remove the cover and place the greens in the pot. Boil for 20 seconds to 2 minutes (depending on the greens).
Remove and drain. If you want to stop the cooking action immediately to preserve the rich green color, simply rinse for several seconds under cold water.
Slice and place on a serving plate. The greens can be served as is, with a dressing, or with a few roasted seeds mixed in.
