Boston Style Baked Beans

  • 3 cups navy beans, soaked overnight (discard water)

  • water 2-2 1/2 cups per cup of beans

  • 1 inch piece of kombu

  • sea salt

  • brown rice vinegar

  • 1-3 tsps mustard

  • 1/3 cup rice syrup

  • 1/3 cup barley malt

  • 5 fu rounds, soaked till soft and cut into bite size pieces (optional)

  • 1/4 cup bonito flakes (optional)


  1. Place kombu, soaked navy beans, and water in a pressure cooker. Cover and bring to pressure, lower flame to medium-low and cook for 40 minutes.

  2. Add sea salt, mustard, sweeteners, and the optional fu and bonito flakes to the cooked beans. Place in a casserole dish, cover and bake about an hour at 350 F.

  3. If you choose not to bake the beans you can cook the beans on the stovetop an additional 15 minutes after adding the other ingredients.

  4. You may serve the beans with brown rice vinegar on the side.
