Cauliflower Soup

  • 4-5 cups water or vegetable broth

  • 2 inches wakame, soaked and cut into small pieces

  • 2 tbsp olive oil

  • 1 onion roughly chopped

  • ½ tsp sea salt

  • 2 cloves garlic chopped

  • 1 head cauliflower chopped

  • 2 cups oat milk (optional)

  • 2 tbsp scallion, parsley, chive, or leek finely chopped


  1. In a large pot, add the water, cauliflower, onion, wakame, and salt.

  2. Bring to boil and simmer approximately 10 minutes.

  3. Using a blender puree the soup until it is smooth and creamy.

  4. If adding the milk, transfer soup back to the pot, add the milk and cook over a medium-low heat until hot.

  5. Turn the flame off and ladle the soup in to bowl. 

  6. Sprinkle with greens.

  7. Serve with tortilla chips, 3 per serving.
