Cold Tofu Salad

  • 1 cake ( 1 lb.) fresh, firm-style tofu, cubed

  • chopped scallions for garnish

  • bonito flakes for garnish (optional)

  • 2 tbsp shoyu

  • 1tsp ginger juice

  • 2 tbsps water


  1. Place the cubed tofu in individual serving dishes. 

  2. Sprinkle a few chopped scallions and a small amount of bonito flakes over the tofu. Spoon the dressing over the garnished tofu when served.

Shoyu-Ginger Dressing

  1. Mix shouy, water, and ginger in a small bowl. 

  • Individuals with health problems may want to blanch the tofu cubes for 1 minute, drain, and cool before garnishing and serving.
