Cold Tofu Salad
1 cake ( 1 lb.) fresh, firm-style tofu, cubed
chopped scallions for garnish
bonito flakes for garnish (optional)
2 tbsp shoyu
1tsp ginger juice
2 tbsps water
Place the cubed tofu in individual serving dishes.
Sprinkle a few chopped scallions and a small amount of bonito flakes over the tofu. Spoon the dressing over the garnished tofu when served.
Mix shouy, water, and ginger in a small bowl.
Individuals with health problems may want to blanch the tofu cubes for 1 minute, drain, and cool before garnishing and serving.
