Daikon and Carrots Pressed Salad
1 cup carrots, sliced into very thin match sticks
1 cup daikon, sliced into very thin match sticks
1/4 teaspoon sea salt
2 tbsps brown rice vinegar
Thoroughly mix the vegetables, sea salt, and vinegar in a pickle press.
Allow the vegetables to press for 1 to 2 hours.
Remove and squeeze out any excess liquid. If too salty for your taste, rinse quickly under cold water.
Place in a serving dish.
