Daikon and Orange Salad

  • 2 cups daikon, cut into very thin match sticks or small chunks

  • 1 teaspoon sea salt

  • 1 small organic orange/juiced, reserve rind

  • a few sprigs of fresh parsley


  1. Place daikon and sea salt in a bowl and press with your hands.

  2. Then place daikon into a salad press. Apply pressure of lid and let press for 30 minutes.

  3. Discard water from the vegetables. Rinse salt off vegetables twice.

  4. Place daikon in a bowl and pour orange juice on top as a dressing. Mix gently. Garnish with slender slices of orange rind and parsley.
