Fu and Vegetable Stir-Fry

  • 5 to 6 rounds of whole wheat fu or flat fu, soaked 10 minutes, liquid squeezed out and sliced in bite-sized chunks

  • 1 cup onion, sliced in half-moons

  • 5 fresh shiitake mushrooms, sliced

  • 1 cup carrot, sliced in thin diagonals

  • 1 1/2 cup green string beans, sliced in half

  • sesame oil

  • shoyu or tamari soy sauce, to taste


  1. Heat a small amount of oil in a skillet.

  2. Saute the onion for 1 to 2 minutes.

  3. Add the shiitake and saute another 2 to 3 minutes.

  4. Add the carrot, green beans, and fu. Saute until the carrot is almost done, stirring occasionally.

  5. Add several drops of shoyu for a slightly salty flavor and cook another 4 to 5 minutes.

  6. Place in a serving bowl.

  • Use variety of vegetables.
