Grated Daikon Soup

  • 1 2-inch dry piece of kombu, rinsed and soaked

  • 2 shiitake mushrooms, soaked in 1/2 cup water and sliced

  • 4 cups water

  • 1/4 to 1/2 teaspoon sea salt

  • 1-1/2 cups daikon radish, grated or sliced

  • 4 sprigs watercress, parsley, or green onion


  1. Place kombu, shiitake and shiitake soaking water in a pot and bring to a boil. Reduce heat and simmer for 10 minutes.

  2. Remove kombu and use in another dish. Add sea salt and cook 10 minutes.

  3. Meanwhile, grate (on a cheese grater) daikon radish.

  4. Add daikon to shiitake broth and simmer 3 minutes. Serve warm, garnished with a sprig of watercress or parsley.
