Lemon-Amasake Kanten

  • 2 cups amasake (liquefied with 2 cups water) 

  • 2 to 4 Tbsps agar-agar flakes (see package instructions) 

  • juice of one lemon; plus the rind (if lemon is organic)


  1. Place amasake in a pan and stir in agar-agar flakes and bring to a boil. Reduce flame to low and simmer for several minutes, until flakes are dissolved. Stir gently.

  2. Turn off flame and add lemon juice (and rind). Pour into individual serving dishes and let set at room temperature for about 1 hour, or chill in refrigerator for about 25 min, according to your taste and condition.
