Miso Soup, Basic

Simple and authentic miso soup.

  • 4-5 cups of water

  • 1 cup of onion, sliced in thin half-moons

  • 1-2 inches of wakame, washed, soaked, and sliced (discard soaking water)

  • 4 tsp of barley miso

  • 2 tbsp of scallion, parsley, or chives, finely chopped, for garnish


  1. Place the water, onion, and wakame in a pot. Cover, place over high flame and bring to boil.

  2. Reduce the flame to medium-low and simmer for 3 to 5 minutes.

  3. Reduce the flame to very low and wait for the water to stop boiling.

  4. Place miso in a cup or bowl, add a few spoons of broth and dilute it.

  5. Stir the diluted miso into the pot of soup. Cover and simmer for 2 to 3 minutes.

  6. Place in the serving bowls and garnish with chopped greens.
