1 pound cooked seitan, sliced
8 to 10 slices whole wheat bread
1 small onion, sliced in thin rounds or rings
several lettuce leaves
sesame oil, for frying seitan
Heat a small amount of oil in a skillet. Fry the slices of seitan 2 to 3 minutes on each side. Remove and place on a plate.
Take half of the bread slices and spread a little mustard on them. On the other slices, spread a little tofu mayonnaise. Place 2 slices of seitan on 4 or 5 slices of bread. Place a little sauerkraut, a few sprouts, and lettuce leaves on top of the seitan. Place the other bread slices on top. You should now have 4 to 5 sandwiches.
Slice each sandwich in half and serve.
