Summer Fried Rice with Sweet Corn

  • 1 cup cooked brown rice

  • 3 ears sweet com, removed from the cob

  • 1/2 cup green beans or peas, sliced thin

  • 1/4 cup carrots, diced

  • 2 tbsp sesame seeds, roasted

  • 1 sheet nori, toasted

  • 2 tbsp sesame oil

  • 1-2 tsp shoyu or tamari


  1. Heat the oil in a skillet.

  2. Add the rice and sprinkle several drops of soy sauce over it. 

  3. Place the com, beans, and carrots on top of the rice. Cover the skillet and reduce the flame to low. Cook until the rice is hot.

  4. Mix the rice and vegetables. Add several more drops of soy sauce for a mild taste, mix in the sesame seeds, and cook for another 2 to 3 minutes.

  5. Remove and place in a serving dish.
