Umeboshi-Pumpkin Seed Dressing

  • 1 umeboshi plum or 1 Tbsp umeboshi vinegar

  • 1/4 cup pumpkin seeds

  • spring water

  • 1/8 cup chopped parsley, scallions, or chives


  1. Sort, wash, and dry roast hulled (green) pumpkin seeds in a skillet.

  2. Grind to a paste in a suribachi.

  3. Remove the pit from an umeboshi plum, finely chop the plum, and grind to a paste with seeds in the suribachi. Or grind the seeds and add the vinegar.

  4. Add water to obtain desired consistency.

  5. Add parsley and serve.

  • If using a coffee grinder, grind the roasted pumpkin seed to a coarse texture. Put it in a bowl, add umeboshi vinigar and water. Mix well. Add greens and serve.
