1 1/2 cup fresh daikon radish
1/3 cup tofu, cubed
pinch of sea salt
small or medium sized clay Nabe pot
Scrub daikon to clean. Grate. Place grated daikon in Nabe pot. Add a small pinch of sea salt. Cover and place on a medium flame. Cook for 3 to 5 minutes.
Slice tofu into cubes. Place in Nabe pot with the grated daikon.
Cover and cook for 3 to 5 minutes. Remove cover and serve in pot.
Yuki Nabe can be eaten by itself, with leftovers, or as part of a meal.
Add mushrooms and greens for variety. Cook mushrooms for 3-4 min before adding daikon. Add greens at the very end and cook for not more than 1 min.
